1. Under the grill, toast one side of your bread. Once toasted, remove from the grill and lay the un-toasted side face up on a baking tray.
2. In bowl mix together the grated cheddar, onion, tomato, chilli and Auntie's Tamarind Sauce - add more Sauce if you would like a looser mixture.
3. Heap the mixture onto the slices of bread and place under the grill until the cheese has melted.
4. Garnish with coriander and for extra tang, dip your toast into a little bowl of Auntie's Tamarind Sauce!
